Easy & Delicious Weeknight Vinaigrette

The first time I made this dressing my boyfriend was hooked.  Ever since that day he actively requests salads for dinner. Considering he’s a burger-loving kinda guy, me = impressed & obsessed.


But this is the power of a great dressing.  It can transform simple vegetables that a lot of people struggle to enjoy into something that you absolutely crave.  By simply training your brain to crave more hydrating, nutrient dense foods you can effortlessly transform your entire body from the inside out.


Long story short.  Try this recipe!


Originally inspired by a recipe by Ina Garten (then tweaked over the years), this is a very basic recipe however incredibly delicious.  And the fact that it’s so easy to put together makes it virtually impossible to come up with an excuse to not whip up a batch any day of the week for your favourite salad.


I love to make this dressing right in a 500mL mason jar and simply shake it up for about 30 seconds to emulsify it.  Typically I’ll double the recipe and keep it on hand in the fridge all week long. If it solidifies a bit, don’t worry, it’s normal.  Just run the jar under warm water and shake it up again.


Signature Balsamic Vinaigrette


½ cup High Quality Extra Virgin Olive Oil

¼ cup Balsamic Vinegar

1 tablespoon Dijon Mustard

½ tsp (or a generous pinch) Sea Salt*


Mix all ingredients together in a jar, shake vigorously until emulsified or mix in a bowl with a whisk.


*It’s very important to season your greens and my favourite way to do that is through the dressing, so I tend to add a bit more salt than what the recipe calls for in my personal salads.
