Daily Essential: Super Rainbow Salad with Green Tahini Dressing Recipe

This is a recipe to add to your daily rotation right away! Not only is it fresh and delicious, but it’s so easy and inexpensive to make. It’s important for me and my cleialso jam-packed with nutrition for glowing skin and boosted energy-levels - perfect for just one or for a hungry crowd.

Why Hydration is Vital for Glowing Skin?

In the TGL Program, you learn a lot about the importance of hydration but I want to outline it here for you, too so you know why I’m so in love with this simple salad recipe.

Hydration is a vital key to having confident, glowing skin all year round. Hydrated skin is sexy skin. It’s glowing, dewy, firm and youthful at any age. As you’ll learn, getting more hydration from plants is important for a healthy, happy body.

When we think of hydration we often think: water. Yes, drinking water is important to get into your daily routine but let’s go a layer deeper. When you optimize your daily diet (note: this has nothing to do with deprivation, fad diets or being perfect - it’s about ADDING powerful, plant-based meals into your current life) and inject plant-based foods into each day, we’re getting a pure source of hydration loaded with concentrated nutrients.

The Hydration <-> Energy Cycle

Proper hydration is also important for your energy levels. The cells in our bodies communicate through electricity. Electricity is how everything functions optimally. Water is the conductor of these electric pulses. It’s critical for our cells to be hydrated for functions of all types to run smoothly. When we’re dehydrated we tend to feel (and look!) tired.

This is one reason why I always remind clients to drink a large glass of room temperature water as soon as you wake up (*if you’re a coffee lover don’t worry - you don’t have to suddenly give it up just hydrate first so your body can naturally energize without relying on caffeine for that feeling of ZING in the AM). It really gets you up and moving and is my secret for feeling refreshed and looking wide awake.

What I call the hydration <-> energy cycle is what happens when we start to chronically let our bodies get dehydrated. When we start the day dehydrated we then feel tired and reach for things like energy drinks or coffee to chemically boost energy levels. These drinks actually make us MORE dehydrated and make us crave all the wrong foods in a desperate attempt to quench our internal thirst. So we feel even more tired and once again reach for more caffeine, sending us further into this cycle.

When this cycle becomes part of our daily lives the results are perpetually fatigued, loose, gaunt skin (hello, dream body - NOT). Dark circles, under eye puffiness and fine lines start to set up camp and it puts a burden on our system making us look and feel blah overall.

Plants are Super Hydrators

Plants are a living matrix of vitamins, minerals, enzymes, antioxidants and phytonutrients suspended in water filtered by the Earth. It’s a true beauty cocktail! The more plants we include in our diets, the more our hydration starts to become 3-dimensional. Instead of just water (booooring) now your body is hydrating while being nourished at the same time. The nutrients are easily assimilated and soaked up by thirsty cells. Healthy cells build a glowing body.

The more hydrated we can keep our bodies using the foods we eat, the more effortless beauty becomes and the less we rely on water for hydration.

Super Daily Rainbow Salad with Green Tahini Dressing


For the Salad:

2 Cups of Baby Kale *

1/2 Small Beet, Peeled and Shredded

1 Carrot, Shredded

1/2 Cucumber, Chopped

1/8 Red Onion, Thinly Sliced

1 Tablespoon Pecans, Chopped

1 Tablespoon Dried Cranberries

For the Green Tahini Dressing:

3 Tablespoons Lemon Juice

2 Tablespoons Water

2 Tablespoons Tahini

2 Garlic Cloves, Minced

1 Teaspoon Tamari

1 Bunch Cilantro

INSTRUCTIONS: To make the salad, simply mix all ingredients together in a large bowl. For the dressing, add all ingredients to a high-speed blender and blend until smooth and creamy. Add the dressing to the salad just before serving.

Note1: I love to make this dressing once a week and keep it in the fridge to add to whatever salads I come up with. It’s so beautifying thanks to its high mineral content and is incredibly delicious.
